Kai Package 4 - Lentil Curry

Serves 2 people

Main Ingredients:

  • 1 can lentils

  • Curry spice mix

  • 1 can chopped tomatoes

  • 1 can coconut milk

  • 1 vegetable stock cube

  • Small quantity of oil

  • 1 Sachet of ready cooked rice and quinoa

Instructions:

1. Toast spice mix in small quantity of oil for 1 minute

2. Add lentils, tomatoes, coconut milk and stock cube with 1 cup water

3. Cook in saucepan until cooked through and hot

4. Serve with warmed rice and quinoa mix.
